Though I like my ar's even for hunting, I have a soft spot for nice walnut, dark blue, and light weight.
Considering a Kimber 84, Win 70 featherweight, Rem 7, etc.
Over the years I've hunted with syn stocks and stainless, But "my" rifle for the last 10+ years is a Browning A bolt II Medallion, in 30 06.
Currently Ive been loading for and partially hunting with a S&W M&P 10. While mine is 100% reliable and accurate, I'm afraid it will have to go for another wood-stocked bolt gun...
Any opinions appreciated.

I sure like my Remington 700 in .308. Although mine probably isn't what you're looking for if you're looking for light weight, Walnut, and blued...
The R700 is a nice, tried and tested, smooth, action and rifle, with a huge aftermarket following though.

Yep, lots of remington rifles out there for sure. Looking at the model 7 as well. May try to find another A-Bolt in 308, but it seems they have been phased out or phasing them out.

Snow Man, are you married to the idea of a bolt gun in .308?
I don't hunt much, but when I do I always use a Marlin 1895 guide gun in 45/70. I do load all my own ammunition so tailoring the cartridge to the game isn't an issue. And I find a great deal of comfort in knowing that with a quick cartridge change (I keep a couple in my pocket) I can kill anything on this planet . . . including the average bulldozer.
Anyway, it is very easy to carry, has beautiful wood, and a surprisingly nice bluing job.

I like my Kimber 8400, but it's not light weight, but it shoots like a dream. Doesn't matter what distance you shoot it from.

Think I'm narrowing it down to the Kimber 84 or a Winchester.
I've handled a 1895 marlin before, it was / still is a fine lever gun.
I have a bite locally for my big 10, so it may happen soon. I really like the 10 for what it is, but my 300 blk set up can take care of all my hog hunting now.

Its not walnut but Im really liking this Mossberg MVP now in 308, uses detachable AR10 mags. I've seen them up close, the stock really eye catching. Its wood but its still got a tactical vibe, fluted barrel and bolt...Pretty well priced. Its on my list.

Nothing like real wood though, I have a refinished beach-wood Swiss, K-31 that gives me my more natural wood fix

I was looking at a model 70 chambered in 30-06 yesterday and it was really tugging at my cash stash , but I have so many other things I need to do with what I already have I hung my head and walked away . I do have an 1895 marlin guide gun 45/70 , its nice to go old school sometimes .

Now now, I know they aren't the most popular, but it fits some of your original criteria. Lightweight for sure, but it's accurate as heck. I have gotten half inch groups out of mine with hand loads at 100 yards. Sure it's got a 16" barrel, so don't plan on going out too far with it, but I'd trust it anywhere out to 300, given that I'm not a great shot anyway. Also, if you are going to use a can, it's threaded. +++
